CHICKEN WITH PEPPERS AND OLIVE

Zutaten

- 400 grams of chicken breast
- 4 medium size peppers
- 20 grams of olives with the pits blacks
- 1 shallot
- 1 small red onion
- 2 sprigs of thyme
- 1 sprig of marjoram
- Dried oregano
- 4 cherry tomatoes
- 4 spoon of extra virgin olive oil
- Half a glass of white wine

Vorbereitung

Wash peppers, remove seeds and cut into strips. In a pan, sauté the onion in the oil and shallots sliced ​​thin, add the peppers, a ladle of water, thyme and marjoram, salt and pepper, cover and cook for 10 minutes over a medium flame . Wash the tomatoes, cut them into quarters and add them together with the olives with peppers, cook for 5 minutes on high and moderate heat without the lid.
Cut the chicken into pieces, put into a pan and brown it with some oil, add the wine and let it evaporate on high heat, season with salt and pepper, add a little oregano and simmer for 10 minutes to flame moderate and, stirring occasionally. Add the chicken to the peppers and cook on high heat for about 5 minutes. Serve hot.
